Bresaola Rocket And Ricotta Rolls

Bresaola with rocket and ricotta is the perfect finger food. When you serve them be quick if you want some yourself as they will be in high demand. Finger food has to be quick and easy to make and can be made ahead of the arrival of your guests. You could replace the ricotta with mascarpone, but I personally prefer ricotta. The rolls are delicious and light finger food.

Ingredients

  • 50 thin slices of bresaola
  • 1 cup of ricotta
  • 2 tbsp parmesan
  • Freshly ground pepper
  • 2-3 cups of rocket

Instructions

  1. In a bowl, mix the ricotta, parmesan and pepper
  2. Place a slice of bresaola on a board  and spread a spoonful of the ricotta mixture, leavin a 1-cm edge empty space around it
  3. Put a few rocket leaves at the bottom of the bresaola and roll the slice up into a little bundle that you place on a big plate
  4. Repeat until you have no more bresaola
  5. Cover these until you are ready to serve. They can be made a few hours ahead of time.
